3P Tilapia

So today I wanted to share a super yummy, super easy recipe for people who love fish. Seriously, it takes like 20 minutes (and most of that is cook time).
I call it 3P Tilapia, because the main seasonings are three ingredients that start with P (Parmesan cheese, paprika, and pepper) and it's tilapia.
Here's what you'll need:

-Tialapia fillets, obviously. For this recipe, I've been using frozen fillets and just thawing them in a bowl of warm water (they thaw out a lot quicker than I expected them to).
-olive oil
-lemon juice
-Parmesan cheese
-paprika
-pepper
-salt
-additional spices as desired (I've been adding a little Mrs. Dash to add an extra little kick)
Here's how you do it:
-Preheat the oven to 400 degrees.
-Combine your cheese and spices in a gallon-sized bag. I don't have exact measurements here, because I'm more of an...experimental?...cook, and I like to eyeball things and add ingredients as I see fit. I think it's a little more fun that way. I like to use a lot of pepper, so it ends up a little kickier; if you don't like pepper as much, use less. That's the beauty of adapting a recipe to your needs :) Shake vigorously to mix evenly.
-Coat the tilapia with the lemon oil mixture. I didn't have a brush to use, so I drizzled some on with a fairly flat baby spoon. Sometimes I use paper towels to dab it on too. Yeah, I'm weird.
-Put the oiled fillets in the bag of cheese and spices and shake to coat. It may be helpful to do this one fillet at a time.
-Put the fillets in a pan and bake for 12-15 minutes, or until the thickest part of the fish is opaque.
-Then eat. It's yummy. Good sides are asparagus and mac and cheese.
