Zucchini Muffins

It's Teacher Appreciation Week, and the PTA parents planned a breakfast for the teachers at Eric's school this morning. I brought muffins. We made four different kinds, but these zucchini muffins are my favorite! They're moist, flavorful, and remind me of my childhood :)

     •2 eggs
     •2tsp vanilla
     •1 1/3c sugar
     •3c grated zucchini
     •1 cup vegetable oil
     •2 3/4c flour
     •1tsp baking soda
     •1tsp baking powder
     •1/4tsp salt
     •1/2tsp nutmeg
     •1tsp ground ginger 
     •2tsp cinnamon 
     •1c chopped walnuts

1.) Preheat the oven to 350° F. Grease a muffin tin or add muffin liners.

2.) In a large bowl, beat the eggs. Stir in vanilla, sugar, zucchini, and oil.

3.) Mix in flour, baking soda, baking powder, salt, and spices until just combined. Stir in walnuts.

4.) Fill muffin cups to the top. Bake 20-30 minutes until a toothpick inserted comes out clean.

Easy and delicious!
