S'mores Bars

We were invited to a cookout recently, and Nolie wanted to bring a dessert. I was overwhelmed with choices, so I decided to limit ideas to a flavor profile. S'mores seemed like the perfect choice; after all, what says summer more than a s'more? And then it occurred to me -- we could combine the ease of rice cereal treats (as my baking show addict children call them) with the flavors of s'mores for an easy, fun, perfectly portable cookout dessert!


•6tbsp butter
•1 10oz package marshmallows
•1 12oz box graham cracker cereal (such as Golden Grahams)
•1 12oz package semi-sweet chocolate chips


1.) Over medium heat, melt the butter in a large saucepan. Stir in marshmallows until melted.

2.) Add 8oz of chocolate chips and stir to combine. Remove from heat.

3.) Stir in cereal until well coated.

4.) Pour mixture into a greased pan. For thicker bars, use a square 8x8 or 9x9 pan. For thinner bars, use a 9x13 pan (this is what I did).

5.) Sprinkle the remaining chocolate chips over the top of the warm mixture. Allow to cool, slice, and serve. To speed up the cooling process, the pan can be placed in the refrigerator.

These bars are SO easy, but they're a definite crowd-pleaser!
